Truffles
grow in different regions of France, Spain and Italy. On the right
is a map showing the different regions where black winter truffle
(Tuber Melanosporum) and white truffle (Tuber Magnatum) grows.
In
France, most of the truffle production comes now from Provence,
and not much from Périgord. The biggest truffle market
takes place in Richerenches, a little village located in northern
Vaucluse, where more than one ton per week can be sold.
The
French truffles need to be in symbiosis with some certain type
of trees: oak trees, hazelnut trees. They grow from 10-30 cm underground,
near the roots.
