Some mysteries still remain in the growth of truffles. We know some of the conditions that helps, but a lot remain a mystery. People have tried and are still trying to grow Tuber Melanosporum in different regions of the world which have approximately the same weather conditions you will find in South of France: in Texas, Australia or New Zealand. They were able to grow truffle but it wasn't a Tuber Melanosporum! Hopefully this mystery will remain. It's what makes this "Tuber" even more special beside its amazing flavor!

In France, most of the truffle production comes now from Provence, and not much from Périgord. The biggest truffle market takes place in Richerenches, a little village located in northern Vaucluse, where more than one ton per week can be sold.

The French truffles need to be in symbiosis with some certain type of trees: oak trees, hazelnut trees. They grow from 10-30 cm underground, near the roots.


Truffles can also grow near other trees beside oak and hazelnut, but these two types of trees will give you the best quality truffles.
The advantage of hazelnut trees is that they will give truffles after 5-7 years, but they will produce truffles for only 15 to 20 years.
Oak trees will produce truffles for 30 to 40 years but you will have to wait 10 to 15 years between planting the young tree and the apparition of the first truffles.

The best weather conditions for a good harvest of black winter truffle are an alternation of sun and rain beginning in March/April. In August, heavy rains help nourish the truffles that are starting to grow at this period.
